Hand #2 - Are there times when you have 20HCP w/5422 Distribution when you do not bid 2NT? ie Do you need Stoppers in All Suits? Do you need Stoppers in BOTH Doubletons?
I wouldn't worry about stoppers. I would just show my 20 points with a 2NT opener.
FYI - I watch the video on my Computer AND I use a 2nd device to see History from BBO. Helps to see what we bid as I'm listening to the video.
