B5 Why not bid 2N showing 6c+ diamond suit and invitational plus, pg 55 (Dealing with interference after 1N)
There isn't a lot of purpose in showing the diamonds. You are balanced without much slam interest, so 3NT is where you are headed.
B7: FYI: right now 11/14 the West bidder doesn't rebid 2D over 1♣ (1♠) X (P) they bid jump to 3♣ which doesn't match Gavin's approach in the video to end up in 3NT.
2♦ is the bid we would teach, and make. But you can understand why someone would bid 3♣, since the clubs are so strong, and one opponent implied diamonds.
B6: playing South I don't see how to avoid being squeezed if EW play out their diamonds. Unless you unprotect the QJ of hearts or the J of clubs you need up needing to throw away all your spades and dealer gets a good spade. If you unprotect the QJ of hearts they get a good 3rd heart. if you don't keep 3 clubs the clubs run.
You are right, although declarer will have a difficult time having a clear count on the spades if you throw three of them away.

On board 1, with 4 little hearts and a reasonable 4-card ♠ suit, should North consider balancing over 2♥. Opponents probably have an 8-card fit and half the deck. Partner probably has at least 3 Spades and a ruffing value,
It's quite possible and probably correct if you know the opponents have 8 hearts, but if they are in a 4-3 fit there is a risk. I would probably risk double or 2♠ even though they look a bit odd, at matchpoints anyway.
